Best-Laid Plans...
So I quickly realized my plan to start this challenge on Christmas Day was a big mistake. Too much going on. Plus I had to work later in the day meaning I had to push the start day back one day. New start day - Tuesday, December 26, 2017.
It's not like I didn't start cooking though on the 25th as my first breakfast I had planned was the Overnight Country Sausage and Hash Brown Casserole. Obviously, this casserole is started the night before. I found this recipe online on the Pillsbury website. All I had to do in the morning was top the casserole with some cheese and throw it in the oven. It couldn't have been much easier to prepare. It's basically eggs, sausage, O'Brien hash browns and cheese. Boom! I cut the recipe in half since I'm not feeding eight people. It turned out great (picture, not so much). I also had leftovers to eat another morning during the week. Winner!
Since I simply had to put the casserole in the oven to bake, I started on my Chicken Salad recipe while it was cooking. I "cheated" by purchasing a rotisserie chicken at the store. The dill in this recipe really kicks it up a notch. Put it in the fridge to chill for a few hours before serving it on a split croissant. Got the recipe from a website called How to Feed a Loon. They say it's the "Best-Ever" chicken salad. I may have to agree. Excellent!
To call it a day, I went with the Shrimp with Herby White Beans recipe off the Epicurious website. I wasn't happy at all with the shrimp that I purchased. I usually buy shrimp from the seafood counter but had to settle for a bag of "large" frozen shrimp. I know better. Anyhow, the bean and tomato base was very good. Herby and sweet. I'll use more garlic next time (and better shrimp). Since this recipe was for two, and my girlfriend doesn't eat seafood or shellfish, I'll have a leftover meal for later in the week.
Day one in the books. Three recipes down. Looking forward to tomorrow.
